    IMO yes, or better. I also cook mine upside down. If you don’t need to present it later, the breasts will just simmer in juice the whole time.

          I figure everyone reading that who is interested is already online on a device that can provide definitions and detailed video instructions on how to do it. Much better than I could.

          Cutting out the turkey’s spine and then flattening it out. It cooks a lot quicker and none of the skin is pointing down so it all gets crispy. Bonus points if you stick a half a lemon under the skin on each breast. If it looks too offensive for a guest, give it a bacon bikini.
